
Last weeks menu plan didn't go off quite as planned. Most of the things were eaten but rarely on the day planned. That's ok. Flexibility is one of the things I am trying to get better at and meal flexibility is a pretty painless place to start. This is the week that I have been summoned for jury duty so meals are quick and easy or things I can make ahead. I also need to get my behind back in gear as far as Weight Watchers goes. I have gained 8lbs since I got back from Germany and that is just not acceptable to me. I did not work so hard to lose 75 lbs just to slack off and gain it all back. I can assure you that all meals are either Simply Filling Foods compliant, or points will be counted for the ingredients/foods that aren't. Yeah... I'm taking my big girl pill.
All meals are served with a spring mix salad and whatever type of fruit sounds good that day.
Monday: Greek Penne
Tuesday: Coconut Chicken with pineapple strawberry salsa
Wednesday: Beans and Cornbread
Thursday: Clean out refrigerator for dinner
Friday Sweet & Sour Chicken
Saturday: Tacos, Mexican rice
Sunday: Buffalo Chicken w/ buttermilk feta sauce and Spicy Escarole
